I don’t know if the new windows to the air well were meant to cool the space better or to confine Ricky Paiva’s gregarious personality to the 2nd floor. The former is a welcome addition to the space, making it cooler if you take the large sofa settings in that cozy enclave; the later, well it didn’t work, I felt Ricky before I even reached the 2nd floor! I loved it.

Flow Bar is as much Paiva’s sunny, West Coast vibe as it is Restaurant Jag’s uber posh modern sophistication with Savoie at the centre. The drinks program “flows’ seamlessly with the restaurant to make the customer experience wholistic and encompassing; you can move around the two spaces pre or post-dinner without feeling disjointed.

The menu has 3 distinct categories; Living Room (Familiar, Classics), Garden (Refreshing, seasonal, flavours of Savoie), and Playground (This is where Ricky goes awesomely mad). My personal favourite for that night was the Espresso Martini; floral Nikka Vodka, an expressive espresso with a good creme and Dulce de Leche for sweetness and depth. Texturally different from a typical Espresso Martini, the Milk Jam elevates the gravity of the drink while smouldering the coffee acidity; the end result is a smooth, balanced, roast concoction with a tinge of floral notes. Exceptionally elegant.

I also liked the Strawberry from the Garden series for its crisp and refreshing taste with a slight herbaceous note and the spirit forward Jesse James (Playground) where the Rye Whiskey played well with the Balavnie 12 year.

Last but not least, the bar bites are something else altogether. Blue Crab (pictured), with Laksa and Thyme Citron and served with toasted bread is light with citrus notes to keep the palate refreshed, and an absolutely stunner when paired with the Jesse James.

Ricky brings a little bit of everything from his experiences spanning San Francisco to Singapore, and pours out his soul at Flow Bar, a bar that he can finally call Home.
